Description

A fresh and vibrant Green Goddess Salad that combines crisp vegetables with a creamy dressing.


Ingredients

Scale
  • 1 small head green cabbage, finely chopped
  • 1 large English cucumber, finely chopped
  • 1/4 cup fresh chives, finely chopped
  • 2 green onions or scallions, finely chopped
  • 1/2 cup fresh basil leaves, packed
  • 1 cup fresh spinach, packed
  • 2 cloves fresh garlic, peeled
  • 1 small shallot, peeled and roughly chopped
  • 3 tablespoons freshly squeezed lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/2 cup raw cashews
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon black pepper, freshly ground, or to taste

Instructions

  1. Thoroughly wash and dry all produce.
  2. Finely chop the cabbage, cucumber, chives, and green onions.
  3. Place all the chopped vegetables and herbs into a very large mixing bowl.
  4. In a high-speed blender or food processor, add the basil, spinach, garlic, shallot, lemon juice, olive oil, raw cashews, nutritional yeast, sea salt, and black pepper.
  5. Blend on high speed until the dressing is completely smooth and creamy, scraping down the sides as needed. If the dressing is too thick, add 1 teaspoon of water or extra lemon juice to adjust the consistency.
  6. Pour the Green Goddess dressing over the chopped vegetables in the large mixing bowl.
  7. Gently toss until all ingredients are evenly coated in the vibrant green dressing.
  8. Serve immediately to enjoy the crisp texture and fresh flavors. Garnish with extra chives or basil if desired.
