Description

A delightful creamy cheesecake topped with fresh strawberries, perfect for any occasion.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 tablespoons sugar
  • 4 (8 oz) packages of cream cheese, softened
  • 1 ¼ cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • ¼ cup all-purpose flour
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, halved
  • 1 tablespoon lemon juice
  • ¼ cup strawberry jam (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (160°C).
  2. Prepare the Crust: In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Set aside.
  3. Make the Cheesecake Batter: In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy. Add eggs one at a time, beating well after each addition. Mix in sour cream and flour until just combined.
  4. Bake the Cheesecake: Pour the batter into the prepared crust. Bake for 1 hour or until the center is set and a toothpick comes out clean from the edge. Let cool at room temperature, then refrigerate for at least 4 hours or overnight.
  5. Prepare the Topping: In a medium bowl, toss the halved strawberries with lemon juice. (Optional: Warm strawberry jam slightly and toss with strawberries for extra sweetness.)
  6. Decorate: Before serving, whip the heavy cream until soft peaks form. Spread or pipe whipped cream around the edge of the cooled cheesecake. Arrange the strawberries on top of the cheesecake.

Notes

  • Ensure cream cheese is softened to avoid lumps in the batter.
  • For a smoother texture, avoid overbeating the batter once the flour is added.
  • Use a knife dipped in warm water to slice cleanly through the cheesecake.
