Instructions
- Preheat the Oven: Preheat your oven to 325°F (160°C).
- Prepare the Crust: Combine graham cracker crumbs and melted butter in a bowl. Mix until the texture resembles wet sand. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake the crust for 10 minutes, then allow it to cool while preparing the filling.
- Make the Cheesecake Filling: In a large bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add the sour cream and vanilla extract, then mix until well combined. Add eggs one at a time, mixing on low speed until fully incorporated.
- Prepare the Strawberry Swirl: Combine strawberry puree and cornstarch in a small saucepan. Cook over medium heat until slightly thickened, then let it cool.
- Assemble the Cheesecake: Pour half of the cheesecake filling over the pre-baked crust. Spoon half of the strawberry mixture over the filling and use a knife to swirl gently. Repeat with the remaining cheesecake filling and strawberry mixture.
- Bake the Cheesecake: Place the springform pan on a baking sheet. Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour.
- Cool and Refrigerate: Remove the cheesecake from the oven and allow it to cool to room temperature. Refrigerate for at least 4 hours, preferably overnight, before serving.
- Serve: Garnish with fresh strawberries and whipped cream before serving.
