  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • ½ cup cooked bacon, crumbled
  • ½ cup sour cream
  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes: Wash and dry the potatoes thoroughly. Using a knife, carefully carve out skull faces on the surface. You can make simple eye and mouth shapes.
  3. Bake the Potatoes: Place the potatoes on a baking sheet. Brush them with olive oil and sprinkle salt and black pepper. Bake for about 45-60 minutes, or until they are tender and the skin is crispy.
  4. Prepare the Filling: While the potatoes bake, mix the shredded cheddar cheese, crumbled bacon, sour cream, butter, garlic powder, and remaining salt and pepper in a bowl.
  5. Stuff the Potatoes: Once the potatoes are done, remove them from the oven. Allow them to cool slightly, then carefully scoop out the insides, leaving about a ¼ inch border. Mash the potato insides and mix them with the prepared filling.
  6. Reassemble and Bake: Fill the potato shells with the cheesy bacon mixture. Return to the oven for an additional 10-15 minutes, until the cheese is melted and bubbly.
  7. Garnish and Serve: Remove from the oven and sprinkle with fresh parsley for garnish. Serve immediately while warm.
