Ingredients

- 2 cups Sushi rice (cooked, sticky)
- 4 sheets Nori sheets
- 1 Avocado (for green iris)
- 8 Black olives or nori circles (for pupils)
- 1 cup Imitation crab or salmon (for “eyeball veins”)
- 1/2 cup Cream cheese (optional)
- 2 tablespoons Rice vinegar
- 1 tablespoon Sugar
- 1/2 teaspoon Salt
Instructions
- Prepare sushi rice by seasoning with rice vinegar, sugar, and salt; let it cool.
- Lay out a sheet of nori and spread rice evenly over the surface.
- Place a strip of avocado in the center for the “iris.”
- Add imitation crab or salmon around the avocado to create a red/orange “vein” effect.
- Roll tightly into a sushi log, sealing edges with a bit of water.
- Slice into rounds, placing a small olive slice or nori circle in the center of the avocado to make the “pupil.”
- Arrange on a platter with fake eyeball props for spooky presentation.
Notes
- For a vegetarian option, omit the imitation crab or salmon.
- Use different colored ingredients for a unique twist.
- Serve with soy sauce or wasabi for added flavor.
