Deliciously stuffed bagels filled with a creamy spinach and artichoke mixture.

- 4 large bagels
- 1 cup fresh spinach, chopped
- 1 can (14 oz) artichoke hearts, drained and chopped
- 8 oz cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/4 cup breadcrumbs
- 1 tablespoon lemon juice (optional)
- Red pepper flakes (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Bagels: Slice the top off each bagel and hollow out the center to create space for the filling.
- Cook Spinach and Artichokes: In a skillet over medium heat, add olive oil and butter. Sauté garlic until fragrant. Add spinach and cook until wilted. Stir in the chopped artichokes. Season with salt, pepper, and optional red pepper flakes. Remove from heat and let cool slightly.
- Mix Filling: In a large bowl, combine cream cheese, mozzarella, and half of the parmesan. Add the cooked spinach and artichoke mix. Stir in lemon juice if using.
- Stuff Bagels: Fill each bagel with the mixture, pressing gently to ensure it’s compact.
- Top with Breadcrumbs and Cheese: Sprinkle remaining parmesan cheese and breadcrumbs over the top of each stuffed bagel.
- Bake: Place stuffed bagels on a baking sheet. Bake in the preheated oven for 15-20 minutes or until the cheese is melted and tops are golden.
- Serve: Allow to cool slightly before serving.
Notes
- For a spicier flavor, consider adding chopped jalapeños to the filling.
- If you prefer a more golden top, broil the bagels for an additional 2-3 minutes.
- These bagels can be prepared in advance, wrapped tightly, and stored in the refrigerator for a quick and easy bake later.
