Description

Ingredients

  • 2 ripe avocados
  • 1 cup sliced mushrooms (button or cremini)
  • 2 slices of whole-grain or sourdough bread
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish
  • Optional: crushed red pepper flakes

Instructions

  1. Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and pepper. Mash with a fork until smooth and creamy. Set aside.
  2. Sauté the Mushrooms: Heat olive oil and butter in a pan over medium heat. Add the sliced mushrooms. Sauté for about 5-7 minutes, until the mushrooms are golden brown and tender. Season with salt, pepper, and optional red pepper flakes.
  3. Toast the Bread: Toast the slices of bread until golden and crisp.
  4. Assemble the Toast: Spread the mashed avocado evenly on each slice of toasted bread. Top with sautéed mushrooms. Garnish with chopped parsley or chives.
