Ingredients

- 2 ripe avocados
- 1 cup sliced mushrooms (button or cremini)
- 2 slices of whole-grain or sourdough bread
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Fresh parsley or chives for garnish
- Optional: crushed red pepper flakes
Instructions
- Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and pepper. Mash with a fork until smooth and creamy. Set aside.
- Sauté the Mushrooms: Heat olive oil and butter in a pan over medium heat. Add the sliced mushrooms. Sauté for about 5-7 minutes, until the mushrooms are golden brown and tender. Season with salt, pepper, and optional red pepper flakes.
- Toast the Bread: Toast the slices of bread until golden and crisp.
- Assemble the Toast: Spread the mashed avocado evenly on each slice of toasted bread. Top with sautéed mushrooms. Garnish with chopped parsley or chives.
Notes
- For extra flavor, add a sprinkle of garlic powder to the mushrooms while sautéing.
- For a twist, add a poached or fried egg on top of each toast.
- Use a variety of mushrooms for a more complex flavor profile.
- If you prefer a spicier kick, increase the amount of crushed red pepper flakes when seasoning the mushrooms.
