- 1 cup (2 sticks) butter, softened
- 2 cups sugar
- 4 ounces German sweet chocolate, melted and cooled
- 4 large eggs, separated
- 1 teaspoon vanilla extract
- 2 1/2 cups cake flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 cup evaporated milk
- 1 cup sugar
- 3 egg yolks
- 1/2 cup butter
- 1 teaspoon vanilla extract
- 1 1/3 cups sweetened shredded coconut
- 1 cup chopped pecans
Instructions
- Prepare the Cake:
- Preheat your oven to 350°F (175°C). Grease three 8-inch round cake pans and line the bottoms with parchment paper.
- In a large bowl, cream the butter and sugar until light and fluffy. Beat in the melted chocolate and egg yolks, one at a time. Stir in the vanilla.
- In another bowl, sift together the cake flour, baking soda, and salt. Gradually add this to the creamed mixture alternately with buttermilk, beginning and ending with the flour mixture.
- In a separate bowl, beat egg whites until stiff peaks form. Fold egg whites into the batter.
- Divide the batter evenly among the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
- Prepare the Frosting:
- In a saucepan, combine the evaporated milk, sugar, egg yolks, and butter. Cook over medium heat, stirring constantly, until thickened and golden brown.
- Remove from heat and stir in the vanilla, coconut, and pecans. Cool until thick enough to spread.
- Assemble the Cake:
- Place the first cake layer on a serving plate. Spread a portion of the frosting on top. Repeat with the second layer. Place the third layer on top and spread frosting evenly over the top and sides of the cake.
Notes
- Ensure that the German sweet chocolate is completely cooled before adding it to the butter and sugar mixture to prevent it from melting the creamed mixture.
- For a moist cake, avoid over-mixing the batter once the flour has been added.
- Make sure to cool the frosting completely before spreading to ensure it thickens properly.
- Toast the pecans lightly to enhance their flavor before adding them to the frosting.
