  • 2 cups sugar
  • 4 ounces German sweet chocolate, melted and cooled
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • 2 1/2 cups cake flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup evaporated milk
  • 1 cup sugar
  • 3 egg yolks
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 1 1/3 cups sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Prepare the Cake:
    1. Preheat your oven to 350°F (175°C). Grease three 8-inch round cake pans and line the bottoms with parchment paper.
    2. In a large bowl, cream the butter and sugar until light and fluffy. Beat in the melted chocolate and egg yolks, one at a time. Stir in the vanilla.
    3. In another bowl, sift together the cake flour, baking soda, and salt. Gradually add this to the creamed mixture alternately with buttermilk, beginning and ending with the flour mixture.
    4. In a separate bowl, beat egg whites until stiff peaks form. Fold egg whites into the batter.
    5. Divide the batter evenly among the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  2. Prepare the Frosting:
    1. In a saucepan, combine the evaporated milk, sugar, egg yolks, and butter. Cook over medium heat, stirring constantly, until thickened and golden brown.
    2. Remove from heat and stir in the vanilla, coconut, and pecans. Cool until thick enough to spread.
  3. Assemble the Cake:
    1. Place the first cake layer on a serving plate. Spread a portion of the frosting on top. Repeat with the second layer. Place the third layer on top and spread frosting evenly over the top and sides of the cake.

Notes

  • Ensure that the German sweet chocolate is completely cooled before adding it to the butter and sugar mixture to prevent it from melting the creamed mixture.
  • For a moist cake, avoid over-mixing the batter once the flour has been added.
  • Make sure to cool the frosting completely before spreading to ensure it thickens properly.
