Ingredients

  • 4 large eggs
  • 100g (1/2 cup) granulated sugar
  • 30g (1/4 cup) unsweetened cocoa powder
  • 60g (1/2 cup) all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 250ml (1 cup) heavy cream
  • 50g (1/4 cup) powdered sugar
  • 1 tsp vanilla extract
  • 100g (1/2 cup) dark chocolate, chopped
  • 100ml (1/2 cup) heavy cream
  • Cocoa powder, for dusting
  • Fresh mint leaves (optional)

Instructions

  1. Preheat the oven to 180°C (350°F). Line a baking sheet (about 10×15 inch) with parchment paper.

  2. In a bowl, beat eggs and granulated sugar until thick and pale, about 5 minutes. Add vanilla extract and mix.

  3. Sift cocoa powder, flour, and salt together. Gently fold the dry ingredients into the egg mixture, ensuring not to deflate the batter.

  4. Pour the batter into the tray and spread evenly. Bake for 10-12 minutes until the top springs back when touched.

  5. While warm, invert onto a clean towel dusted with cocoa powder. Gently peel away the parchment and roll the sponge with the towel. Cool completely.

  6. Beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  7. Unroll the cooled sponge and spread the cream over it, leaving a small border. Reroll the sponge without the towel.

  8. Heat the cream until it just begins to boil. Pour over the chopped chocolate and let sit for 2 minutes.

  9. Mix until smooth and let it cool slightly until thickened but pourable.

  10. Pour the ganache over the cake, spreading evenly. Cool in the refrigerator until set.

Notes

  • Roll the cake while it is warm to prevent cracking.
  • If your ganache splits, whisk in a small amount of warm milk until it comes together.
  • Serve with a dusting of cocoa powder or with fresh mint leaves for freshness.
