- Prepare Cream Cheese Filling: In a medium bowl, beat the cream cheese, powdered sugar, and 1/2 teaspoon of vanilla extract until smooth. Roll the mixture into small balls (about 1 teaspoon each) and place on a lined baking sheet. Freeze for about 30 minutes or until firm.
- Make Cookie Dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg, red food coloring, and 2 teaspoons of vanilla extract until well mixed. In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Assemble Cookies: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop out about 2 tablespoons of cookie dough and flatten it slightly. Place one of the cream cheese balls in the center and fold the dough around it, ensuring it is completely sealed. Place the stuffed cookie dough balls onto the prepared baking sheet about 2 inches apart.
- Bake: Bake in the preheated oven for 10-12 minutes, or until edges are set and tops are slightly cracked. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
