- 4 large Portobello mushroom caps
- 1 cup pizza sauce
- 1 ½ cups shredded mozzarella cheese
- 1/4 cup sliced black olives
- 1/4 cup chopped red onion
- 1/4 cup chopped bell peppers
- 1 teaspoon dried oregano
- Fresh basil leaves for garnish
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Mushroom Caps: Clean the Portobello mushroom caps with a damp paper towel. Remove the stems and gills using a spoon. Lightly brush the caps with olive oil and sprinkle with salt and pepper.
- Bake the Mushroom Caps: Place the mushroom caps on a baking sheet, gill side up. Bake in the preheated oven for about 8-10 minutes until they start to soften.
- Prepare the Toppings: While the mushrooms are baking, slice the black olives, chop the red onion and bell peppers.
- Assemble the Pizza Caps: Remove the mushrooms from the oven and drain any excess moisture. Spread a generous amount of pizza sauce over each mushroom cap. Sprinkle mozzarella cheese evenly over the sauce. Add sliced olives, chopped onions, and bell peppers on top. Sprinkle dried oregano for extra flavor.
- Bake the Assembled Caps: Return the assembled mushrooms to the oven. Bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven and let them cool slightly. Garnish with fresh basil leaves before serving.

- For added flavor, consider marinating the mushroom caps in balsamic vinegar, olive oil, and garlic for about 15 minutes before cooking.
- Feel free to customize with additional toppings such as cooked sausage, pepperoni, or fresh tomatoes.
