- 4 large yellow onions, thinly sliced
- 6 cups vegetable or chicken broth

Instructions
- Start by peeling and thinly slicing the onions. The thinner the slices, the better they will caramelize.
- In a large pot over medium heat, add the olive oil (or butter) and sesame oil. Allow the oils to heat up until shimmering.
- Add the sliced onions to the pot. Cook for about 10-15 minutes, stirring occasionally until they are well caramelized. They should turn a rich golden brown.
- Pour the vegetable or chicken broth into the pot, stirring well to combine with the onions.
- Add the soy sauce to the pot, stirring again to incorporate all flavors evenly.
- Bring the soup to a gentle boil. Reduce the heat and let it simmer for another 15-20 minutes to fuse the flavors together.
- Before serving, taste the soup. You may want to add more soy sauce or sesame oil, depending on your preference.
- Ladle the hot soup into bowls. You can garnish it with sliced green onions or serve it with rice for a heartier meal.
