- 2 cups fresh cranberries
- ¼ cup honey
- 2 tsp fresh thyme, chopped
- 2 tbsp olive oil
- ¼ cup low-sodium soy sauce
- 1 tsp garlic powder
- ½ tsp freshly ground black pepper
- Salt to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Season chicken breasts generously with salt and pepper on both sides.
- In a bowl, whisk together honey, soy sauce, garlic powder, and olive oil.
- Place seasoned chicken in the baking dish and pour the sauce over it.
- Scatter fresh cranberries around the chicken and sprinkle with thyme.
- Bake uncovered for 35-40 minutes until the internal temperature reaches 165°F (75°C).
- Let rest for 5 minutes before slicing and serving.
