Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh cranberries
  • ¼ cup honey
  • 2 tsp fresh thyme, chopped
  • 2 tbsp olive oil
  • ¼ cup low-sodium soy sauce
  • 1 tsp garlic powder
  • ½ tsp freshly ground black pepper
  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Season chicken breasts generously with salt and pepper on both sides.
  3. In a bowl, whisk together honey, soy sauce, garlic powder, and olive oil.
  4. Place seasoned chicken in the baking dish and pour the sauce over it.
  5. Scatter fresh cranberries around the chicken and sprinkle with thyme.
  6. Bake uncovered for 35-40 minutes until the internal temperature reaches 165°F (75°C).
