These peppermint chocolate discs are a delightful treat, combining the refreshing taste of peppermint with rich chocolate.

- 2 1/4 cups powdered sugar
- 1 1/2 tablespoons unsalted butter, softened
- 2 tablespoons heavy cream
- 1/2 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract (optional)
- 1 pinch salt
- 10 oz semi-sweet or dark chocolate, chopped or chips
- 1 tablespoon coconut oil or shortening
- Flaky sea salt for garnish (optional)
- Natural food coloring (optional)
Instructions
- In a large bowl, mix powdered sugar, softened butter, peppermint extract, vanilla, salt, and heavy cream until a thick dough forms. Adjust consistency with extra sugar or cream as needed.
- Lightly dust a surface with powdered sugar and roll out the dough to 1/4-inch thickness. Cut into discs using a 1 to 2-inch cookie cutter.
- Place the discs on a parchment-lined tray and chill for 20–30 minutes until firm.
- Melt the chocolate with coconut oil using a double boiler or microwave in short bursts, stirring until smooth.
- Dip each chilled peppermint disc in the melted chocolate using a fork. Tap off excess and place back on parchment.
- Let set at room temperature for 30 minutes or refrigerate for 10–15 minutes. Sprinkle with flaky salt before chocolate fully sets (optional).
- Serve immediately or store in an airtight container.

- Feel free to use different types of chocolate for dipping.
