- 2 tablespoons Olive oil
- 2 tablespoons Honey (or maple syrup)
- 1 teaspoon Smoked paprika
- Salt to taste
- Black pepper to taste
- 1 teaspoon Garlic powder
- 1 tablespoon Balsamic vinegar
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment.
- Wash carrots, peel lightly, and carve small jack-o’-lantern faces using a paring knife.
- In a bowl, whisk olive oil, honey, balsamic, paprika, garlic powder, salt, and pepper.
- Brush carrots generously with the glaze.
- Roast 25–30 minutes, turning halfway, until tender and slightly caramelized.
- Broil for 2–3 minutes if extra char is desired.
- Serve warm with the spooky faces facing up for effect.
Notes
- For a vegan option, use maple syrup instead of honey.
- Adjust the seasoning according to your taste preference.
