Description

Charred jack-o’-lantern–style carrots with a sweet and smoky glaze for a spooky side dish.


Ingredients

  • Whole carrots with tops
  • 2 tablespoons Olive oil
  • 2 tablespoons Honey (or maple syrup)
  • 1 teaspoon Smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon Garlic powder
  • 1 tablespoon Balsamic vinegar

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment.
  2. Wash carrots, peel lightly, and carve small jack-o’-lantern faces using a paring knife.
  3. In a bowl, whisk olive oil, honey, balsamic, paprika, garlic powder, salt, and pepper.
  4. Brush carrots generously with the glaze.
  5. Roast 25–30 minutes, turning halfway, until tender and slightly caramelized.
  6. Broil for 2–3 minutes if extra char is desired.
  7. Serve warm with the spooky faces facing up for effect.
