Description
A delicious ham and broccoli strata, perfect for brunch or a hearty breakfast.
Ingredients

- 1 tablespoon extra virgin olive oil
- 1 medium onion (diced)
- 12 oz frozen broccoli (thawed)
- 1 14 oz loaf French bread (cut into cubes)
- 1/2 lb fully cooked ham (chopped)
- 6 large eggs (lightly beaten)
- 1 1/2 cups milk
- 2 tablespoons chopped chives
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded Cheddar cheese
Instructions
- Heat oven to 375°F. Coat a 2 to 3-quart baking dish with nonstick spray.
- Heat oil in a large nonstick skillet over medium heat. Add onion and cook 5 minutes. Add broccoli and cook another 3 minutes.
- Place bread cubes in a large bowl. Stir in broccoli-onion mixture and the ham.
- In a medium bowl, whisk together the eggs, milk, chives, mustard, salt and pepper. Pour over bread mixture, stirring to mix.
- Transfer to prepared dish, and top evenly with cheese.
- Bake at 375° for 40 to 45 minutes, or until the center of the strata is set and the cheese is melted and bubbly. Let the strata cool for a few minutes before serving.
Notes
- This dish is great for using up leftover bread and ham.
- It can be prepared the night before and baked in the morning.
