Description

A delicious ham and broccoli strata, perfect for brunch or a hearty breakfast.


Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium onion (diced)
  • 12 oz frozen broccoli (thawed)
  • 1 14 oz loaf French bread (cut into cubes)
  • 1/2 lb fully cooked ham (chopped)
  • 6 large eggs (lightly beaten)
  • 1 1/2 cups milk
  • 2 tablespoons chopped chives
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded Cheddar cheese

Instructions

  1. Heat oven to 375°F. Coat a 2 to 3-quart baking dish with nonstick spray.
  2. Heat oil in a large nonstick skillet over medium heat. Add onion and cook 5 minutes. Add broccoli and cook another 3 minutes.
  3. Place bread cubes in a large bowl. Stir in broccoli-onion mixture and the ham.
  4. In a medium bowl, whisk together the eggs, milk, chives, mustard, salt and pepper. Pour over bread mixture, stirring to mix.
  5. Transfer to prepared dish, and top evenly with cheese.
  6. Bake at 375° for 40 to 45 minutes, or until the center of the strata is set and the cheese is melted and bubbly. Let the strata cool for a few minutes before serving.

Notes

  • This dish is great for using up leftover bread and ham.
  • It can be prepared the night before and baked in the morning.
