- 3 cups cauliflower florets
- 1½ cups sliced mushrooms
- 3 tbsp butter
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and black pepper to taste
- 1 tbsp chopped parsley
- Grated Parmesan (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking tray.
- Toss cauliflower with olive oil, salt, and pepper; roast for 20 minutes.
- Meanwhile, sauté mushrooms in butter until browned.
- Add garlic to the pan and cook 1 minute until fragrant.
- Combine roasted cauliflower and mushrooms in a bowl.
- Toss with extra butter if desired and sprinkle parsley.
- Serve warm, optionally topped with Parmesan for extra flavor.
