Description
A fun and colorful cheesecake made with fruity cereal and a creamy filling, perfect for any occasion!
Ingredients
Scale
- 3 cups fruity cereal (such as Fruity Pebbles), divided
- 24 oz cream cheese (3 packages), softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 tablespoon gelatin
- 1/2 cup butter, melted
- 1/2 cup powdered sugar
- 2 tablespoons lemon juice
- 1/4 cup cold water
Instructions
- Crust Preparation:
- Prepare Cereal Base: Crush 2 cups of the fruity cereal into fine crumbs.
- Mix Crust Ingredients: Combine the crushed cereal with the melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Chill in the refrigerator for about 30 minutes.
- Cheesecake Filling:
- Dissolve Gelatin: In a small bowl, combine the gelatin and cold water. Let it sit for 5 minutes to bloom, then heat gently until dissolved.
- Mix Cheese Base: In a large bowl, beat the softened cream cheese until smooth. Add in the granulated sugar and vanilla extract, continuing to beat until thoroughly combined.
- Add Gelatin and Lemon: Gradually add the dissolved gelatin and lemon juice into the cream cheese mixture, mixing well.
- Whip Cream: In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form. Fold into the cream cheese mixture until smooth and well combined.
- Incorporate Cereal: Gently fold in 1 cup of the whole fruity cereal into the cheesecake batter.
- Assembly:
- Pour Filling: Pour the cheesecake filling over the prepared crust, spreading it evenly.
- Top Decoratively: Sprinkle the remaining fruity cereal on top, pressing down lightly so it sticks.
- Chill:
- Set Cheesecake: Refrigerate the cheesecake for at least 4 hours or until fully set. For best results, let it chill overnight.
Notes
- For a firmer crust, bake the cereal crust in a 350°F (175°C) oven for 10 minutes before cooling and adding the filling.
- Ensure cream cheese is at room temperature for a smoother filling.
- For easy removal, line the base of the springform pan with parchment paper before adding the crust mixture.
