Description

Ingredients

  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 ½ cups freshly grated Parmesan cheese
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Cook the Fettuccine: Bring a large pot of salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. Sauté the Garlic: In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant — not browned. This step brings out the aromatic base for your sauce.
  3. Add the Cream: Slowly pour in the heavy cream, stirring constantly. Let it simmer gently for about 5 minutes, allowing it to thicken just slightly. Don’t let it boil.
  4. Stir in the Parmesan: Reduce the heat to low and stir in the Parmesan cheese. Whisk or stir constantly until the cheese melts completely and the sauce becomes smooth and velvety. If it seems too thick, add a splash of reserved pasta water.
  5. Combine Pasta and Sauce: Add the drained fettuccine to the sauce. Toss gently using tongs until every strand is coated in the creamy mixture. If needed, add more pasta water to loosen the sauce to your desired consistency.
  6. Season and Serve: Season with salt and freshly ground black pepper to taste. Serve immediately with a sprinkle of chopped parsley for a touch of color.
