Description
A delicious and healthy chicken spinach salad with Greek yogurt dressing and crunchy pecans.
Ingredients

- 2 cups chopped or shredded chicken
- 1 cup spinach, finely chopped
- ¾ cup Greek yogurt
- ½ a large apple, chopped (about ½ cup chopped)
- ½ a red onion, chopped (about ½ cup chopped)
- ¼ cup dried cranberries
- ¼ cup pecans, chopped
- 1 Tbsp extra virgin olive oil
- 3–4 Tbsp fresh lemon juice
- ½ tsp garlic powder
- ¼ tsp kosher salt (more to taste)
- ¼ tsp black pepper (more to taste)
Instructions
- Dice the chicken into small pieces or shred it (whichever you prefer). You can use a sharp knife, a food processor, or 2 forks for shredding.
- Chop the apple, pecans, and red onion finely to ensure even incorporation into the mixture.
- Add all the ingredients to a large bowl and mix well until everything is coated.
- Taste the mixture and add more salt as needed.
- Hint: Since the flavor depends partly on how you cook your chicken, taste the mixture again after mixing. If it tastes bland, add more salt to taste before making any other adjustments.
Notes
- This salad can be served immediately or chilled in the refrigerator for a while for enhanced flavors.
- Great as a light lunch or a side dish for dinner.
