- 100g (1/2 cup) granulated sugar
- 1 tsp vanilla extract
- 100g (3/4 cup) all-purpose flour
- 1 tsp baking powder
- Pinch of salt
- 200ml (3/4 cup) heavy cream
- 30g (2 tbsp) powdered sugar
- 1 tsp vanilla extract
- Cocoa powder for dusting
Instructions
- Prepare the Cake Batter:
Preheat your oven to 180°C (350°F). Line a rectangular baking tray with parchment paper.
In a bowl, beat the eggs and granulated sugar together using an electric mixer until the mixture is thick and pale.
Add the vanilla extract and mix until combined.
Sift together the flour, baking powder, and salt. Gradually fold into the egg mixture using a spatula. - Bake the Cake:
Pour the batter onto the prepared baking tray and spread it evenly.
Bake for 8-10 minutes, until the cake is springy to the touch. - Prepare the Filling:
While the cake cools, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. - Assemble the Swiss Roll:
Once the cake is cool, carefully peel off the parchment paper.
Spread the whipped cream evenly over the cake.
Gently roll the cake, starting from one short side. Use the parchment paper to help guide the roll.
Once rolled, secure with the seam side down, and dust with cocoa powder. - Chill and Serve:
Refrigerate the Swiss roll for at least one hour before slicing and serving.
