Description

Ingredients

  • 500 grams Skinless Chicken Thigh Fillet
  • 1/2 cup Dark Brown Sugar
  • 1 teaspoon Ground White Pepper
  • 2 tablespoons Rice Flour
  • 1 teaspoon Salt
  • 4 cloves Garlic (grated)
  • 1/4 cup Soy Sauce
  • 1/4 cup Vinegar
  • 1/2 cup Pineapple Juice
  • 1 teaspoon Red Food Color
  • 1/4 cup Water
  • 2 tablespoons Oil

Instructions

  1. In a large bowl, combine dark brown sugar, ground white pepper, rice flour, salt, grated garlic, soy sauce, vinegar, and pineapple juice. Stir until well blended to form a marinade.
  2. Add skinless chicken thigh fillets to the bowl, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to 24 hours.
  3. In a skillet or wok, place the marinated chicken and water. Cook uncovered on medium-high heat for 15-20 minutes, stirring occasionally.
  4. Add a drizzle of oil to the skillet, then cook until the sauce thickens and caramelizes slightly.
  5. Plate the Chicken Tocino hot, ideally served with garlic rice, a fried egg, and a side of tomatoes or spiced vinegar.
