- 1/2 cup Dark Brown Sugar
- 1 teaspoon Ground White Pepper
- 2 tablespoons Rice Flour
- 1 teaspoon Salt
- 4 cloves Garlic (grated)
- 1/4 cup Soy Sauce
- 1/4 cup Vinegar
- 1/2 cup Pineapple Juice
- 1 teaspoon Red Food Color
- 1/4 cup Water
- 2 tablespoons Oil
Instructions
- In a large bowl, combine dark brown sugar, ground white pepper, rice flour, salt, grated garlic, soy sauce, vinegar, and pineapple juice. Stir until well blended to form a marinade.
- Add skinless chicken thigh fillets to the bowl, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to 24 hours.
- In a skillet or wok, place the marinated chicken and water. Cook uncovered on medium-high heat for 15-20 minutes, stirring occasionally.
- Add a drizzle of oil to the skillet, then cook until the sauce thickens and caramelizes slightly.
- Plate the Chicken Tocino hot, ideally served with garlic rice, a fried egg, and a side of tomatoes or spiced vinegar.

- Marinating the chicken for longer enhances the flavor.
- Serve with steamed rice or garlic rice for a complete meal.
