Ingredients

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper.
  2. Sift together the flour, cocoa powder, baking powder, and salt in a bowl.
  3. In a separate bowl, whisk eggs and granulated sugar on high speed until thick and pale. Stir in the vanilla extract.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared pan, spreading it evenly. Bake for about 10-12 minutes, or until the cake springs back when touched lightly.
  6. While the cake is warm, turn it out onto a clean kitchen towel dusted with powdered sugar. Gently peel off the parchment paper. Roll the cake with the towel from the short end and let it cool completely.
  7. In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Carefully unroll the cooled cake and spread the whipped cream evenly over the surface.
  9. Reroll the cake without the towel and place it seam-side down on a serving platter.
  10. Drizzle with chocolate ganache and sprinkle with crushed chocolate cookies. Dust with powdered sugar.
