- 3 tbsp olive oil
- 3 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp chopped parsley
- ½ tsp paprika (optional)
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Cut potatoes into thick wedges and soak in cold water for 10 minutes; pat dry.
- Toss wedges with olive oil, garlic, salt, pepper, and paprika.
- Arrange skin-side down and bake for 35 minutes, flipping halfway through.
- Remove from oven, sprinkle generously with Parmesan, and bake for 5 more minutes.
- Garnish with parsley and extra cheese before serving.
- Serve hot with a side of ranch or garlic aioli.
