Description

Golden, crunchy potato wedges coated in garlic butter and topped with parmesan and herbs for the perfect side dish.


Ingredients

  • 4 medium russet potatoes
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp chopped parsley
  • ½ tsp paprika (optional)

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Cut potatoes into thick wedges and soak in cold water for 10 minutes; pat dry.
  3. Toss wedges with olive oil, garlic, salt, pepper, and paprika.
  4. Arrange skin-side down and bake for 35 minutes, flipping halfway through.
  5. Remove from oven, sprinkle generously with Parmesan, and bake for 5 more minutes.
  6. Garnish with parsley and extra cheese before serving.
  7. Serve hot with a side of ranch or garlic aioli.
