- 1 pound beef steak, thinly sliced
- 1 cup shredded cheese (e.g., mozzarella or cheddar)
- 12 eggroll wrappers
- 1 tablespoon vegetable oil (for cooking beef)
- 1 cup bell peppers, diced (variety of colors)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon black pepper
- 1 teaspoon salt
- Vegetable oil (for frying)
- Optional: green onions for garnish
Instructions
- Prepare the Beef Filling: Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the sliced beef, cooking until browned and cooked through, about 5-7 minutes. Remove the beef from the skillet and set aside.
- Cook the Vegetables: In the same skillet, add the diced bell peppers, chopped onion, and minced garlic. Sauté until the vegetables are softened, approximately 4-5 minutes. Stir in the soy sauce, salt, and black pepper.
- Combine Ingredients: Return the beef to the skillet and mix with the vegetables. Remove from heat and allow to cool slightly.
- Assemble the Eggrolls: Lay an eggroll wrapper on a clean surface, with one corner pointing towards you. Place 2 tablespoons of the beef and vegetable mixture in the center. Sprinkle with a generous amount of shredded cheese. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with a bit of water.
- Fry the Eggrolls: Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C). Carefully add the eggrolls and fry until golden brown and crispy, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.
Notes
- To ensure the wrappers stay crispy, avoid overfilling the eggrolls.
- For an extra kick, add a dash of hot sauce to the beef mixture.
- You can bake the eggrolls at 400°F (200°C) for a healthier version; brush them with oil before baking.
- Serve with dipping sauces like sweet chili sauce or soy sauce.
