  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 ½ cups freshly grated Parmesan cheese
  • Salt and black pepper, to taste
  • 1 tsp Italian seasoning
  • 1 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Boil the Pasta: Start by bringing a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve about ½ cup of the pasta water before draining. Set the pasta aside.
  2. Sauté the Shrimp: In a large skillet over medium heat, warm 2 tablespoons of olive oil. Add the shrimp in a single layer, seasoning with salt, pepper, and half the Italian seasoning. Sauté for 2–3 minutes per side, or until they turn pink and opaque. Remove the shrimp and set them aside on a plate.
  3. Make the Alfredo Sauce: In the same skillet, reduce heat to medium-low and add butter along with the remaining olive oil. Once the butter is melted, add the minced garlic and cook for 30 seconds, just until fragrant—don’t let it brown. Slowly pour in the heavy cream, whisking as you go. Bring the mixture to a gentle simmer and let it cook for 3–5 minutes, stirring often. Gradually stir in the grated Parmesan cheese until the sauce becomes smooth and creamy. If it gets too thick, loosen it with a splash of reserved pasta water.
  4. Combine Pasta and Sauce: Add the cooked fettuccine to the skillet, tossing to coat in the Alfredo sauce. Return the shrimp to the pan and toss gently to combine everything. Taste and adjust seasoning with more salt, pepper, or Italian seasoning as needed.
  5. Garnish and Serve: Serve the creamy shrimp fettuccine pasta immediately, topped with chopped parsley and an extra sprinkle of Parmesan if you like.
