Instructions
- Prepare the Crust: Preheat the oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Press the mixture firmly onto the bottom of a 9-inch springform pan. Bake the crust for 10 minutes. Remove from oven and set aside to cool.
- Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add 1 1/4 cups of sugar and continue beating until light and fluffy. Mix in the vanilla extract and flour. Add the eggs one at a time, mixing well after each addition. Be careful not to overbeat. Finally, fold in the sour cream and salt until fully incorporated.
- Assemble and Bake: Pour the cheesecake filling over the prepared crust. Smooth the top with a spatula to ensure it is evenly distributed. Bake for about 55 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake rest inside with the door slightly open for an hour.
- Cool and Serve: Once the hour has passed, remove the cheesecake from the oven. Run a knife around the edge to loosen it from the pan. Cool at room temperature for another hour, then refrigerate for at least 4 hours, preferably overnight.
- Serve: Remove the cheesecake from the springform pan before slicing. Serve chilled.
