- 1 lb large shrimp, peeled and deveined
- 8 oz fettuccine or linguine pasta
- 2 tablespoons Cajun seasoning
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook the fettuccine according to package instructions until al dente. Drain and set aside.
- Prepare the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add the shrimp and sprinkle with Cajun seasoning. Cook for 2-3 minutes per side until the shrimp are pink and opaque. Remove the shrimp and set aside.
- Make the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add halved cherry tomatoes and cook until slightly softened. Pour in the heavy cream, bringing it to a gentle simmer. Stir in the Parmesan cheese until the sauce is smooth and creamy.
- Combine Everything: Add the cooked pasta and shrimp back into the skillet, tossing to coat them evenly with the sauce. Season with salt and pepper to taste.
- Finish and Serve: Remove from heat and garnish with chopped fresh parsley before serving.
Notes
- For extra spice, add a pinch of red pepper flakes when cooking the garlic.
- You can substitute heavy cream with half-and-half for a lighter version.
