Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. Prepare the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add the shrimp and sprinkle with Cajun seasoning. Cook for 2-3 minutes per side until the shrimp are pink and opaque. Remove the shrimp and set aside.
  3. Make the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add halved cherry tomatoes and cook until slightly softened. Pour in the heavy cream, bringing it to a gentle simmer. Stir in the Parmesan cheese until the sauce is smooth and creamy.
  4. Combine Everything: Add the cooked pasta and shrimp back into the skillet, tossing to coat them evenly with the sauce. Season with salt and pepper to taste.
  5. Finish and Serve: Remove from heat and garnish with chopped fresh parsley before serving.
