- 2 tbsp cornstarch
- 1 pie crust (top and bottom)
- 1 tbsp lemon juice
- 1 egg (for egg wash)

Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix cherries, sugar, cornstarch, and lemon juice.
- Line a pie dish with the bottom crust and pour in the cherry filling.
- Cut the second crust into strips and create a lattice pattern on top.
- Brush with egg wash and sprinkle with coarse sugar for a golden finish.
- Bake for 45–50 minutes, until the crust is crisp and filling is bubbling.
- Cool slightly before slicing to allow the filling to set.
- Serve each slice warm with a scoop of creamy vanilla ice cream.
Notes

- Let the pie cool for at least 15 minutes before serving to help the filling set.
