Delicious and fluffy chocolate chip pancakes perfect for breakfast!
Ingredients

- 1 3/4 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 3 tablespoons melted butter (plus more for the griddle)
- 2 eggs (separated)
- 2 teaspoons vanilla extract
- 1/2 cup mini chocolate chips
Instructions
- Add the flour, sugar, baking powder, and salt to a large bowl. Whisk to combine.
- In another bowl, whisk together the milk, butter, egg yolks, and vanilla. Place the egg whites in a small bowl.
- Pour the milk mixture into the dry ingredients and mix to combine. (There will still be small lumps – do not over mix.)
- Beat the egg whites with a hand mixer until stiff peaks form. Add about 1/3 of the egg whites to the batter and stir to combine. Add the remaining egg whites and the chocolate chips and gently fold everything together until no white streaks appear.
- Heat a griddle or skillet over medium-high heat. Grease with butter or nonstick cooking spray.
- Pour about 1/3 cup of the batter onto a hot griddle. Let the pancakes cook until bubbles form, then flip and continue to cook until browned and cooked through.
- Continue with the remaining batter until all of the pancakes are cooked.
Notes
- For added flavor, try using brown sugar instead of white.
- Serve with maple syrup or whipped cream.
