Description

A delicious and creamy shrimp lasagna baked to perfection with layers of noodles and cheeses.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/2 cup cream cheese
  • 1/2 cup heavy cream
  • 1 cup marinara sauce
  • Salt and pepper to taste
  • 1 tbsp Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Add shrimp, season with salt, pepper, and Italian seasoning. Cook until pink. Remove shrimp and set aside.

  3. Cook lasagna noodles according to package instructions. Drain and set aside.

  4. In a bowl, mix ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Add cream cheese and mix well.

  5. In a greased 9×13 inch baking dish, spread a thin layer of marinara sauce. Place a layer of lasagna noodles over the sauce. Spread a layer of the cheese mixture, followed by a layer of shrimp. Drizzle a little heavy cream over the shrimp, sprinkle with parsley. Repeat layering process: noodles, cheese mixture, shrimp, sauce, cream, and parsley. Top with remaining mozzarella and Parmesan cheese.

  6. Cover with aluminum foil and bake in preheated oven for 25 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden brown.

  7. Remove from oven and let it cool for a few minutes. Garnish with more parsley before serving.

Notes

  • Ensure noodles are slightly undercooked during initial boiling, as they will continue to cook in the oven.
  • For added flavor, consider adding a layer of Alfredo sauce or a mix of marinara and Alfredo for a pink sauce variation.
  • Be careful not to overcook the shrimp in the skillet, as they will continue to cook in the oven.
  • Feel free to add a pinch of nutmeg to the cheese mixture for added depth of flavor.
