These cheesy grilled chicken burritos are a delicious and satisfying meal, filled with marinated chicken, rice, beans, and cheese, then baked to perfection.

- 2 large chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1 cup cooked rice
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup corn kernels, cooked
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon butter, melted
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, paprika, garlic powder, onion powder, salt, and pepper. Coat the chicken breasts with the marinade and let them sit for at least 30 minutes.
- Grill the Chicken: Preheat a grill or stovetop grill pan over medium-high heat. Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked. Once cooked, remove from heat and let them rest for a few minutes before slicing into strips.
- Prepare the Filling: In a large bowl, combine the sliced grilled chicken, cooked rice, black beans, corn, and half of the chopped cilantro. Mix well.
- Assemble the Burritos: Lay out a tortilla on a flat surface. Spread 2 tablespoons of sour cream down the center of the tortilla. Add one-quarter of the chicken and rice mixture on top of the sour cream. Sprinkle a generous amount of both cheddar and Monterey Jack cheese. Fold in the sides of the tortilla and roll it up tightly.
- Grill the Burritos: Preheat your oven to 400°F (200°C). Brush each burrito with melted butter and place them on a baking sheet. Sprinkle more cheese on top. Bake for 10-12 minutes or until the cheese is melted and bubbly.
- Serve: Garnish with the remaining cilantro. Serve warm with salsa on the side.

- For extra flavor, add jalapeños or hot sauce to the filling.
- If you prefer a crispier burrito, pan-fry each side lightly before baking.
- Swap the cheeses with your favorites, like pepper jack for an extra kick.
