Description

Delicious burritos filled with grilled chicken, cheese, and fresh ingredients, perfect for a quick meal!


Ingredients

  • 2 large chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels, cooked
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon butter, melted

Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, paprika, garlic powder, onion powder, salt, and pepper. Coat the chicken breasts with the marinade and let them sit for at least 30 minutes.
  2. Grill the Chicken: Preheat a grill or stovetop grill pan over medium-high heat. Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked. Once cooked, remove from heat and let them rest for a few minutes before slicing into strips.
  3. Prepare the Filling: In a large bowl, combine the sliced grilled chicken, cooked rice, black beans, corn, and half of the chopped cilantro. Mix well.
  4. Assemble the Burritos: Lay out a tortilla on a flat surface. Spread 2 tablespoons of sour cream down the center of the tortilla. Add one-quarter of the chicken and rice mixture on top of the sour cream. Sprinkle a generous amount of both cheddar and Monterey Jack cheese. Fold in the sides of the tortilla and roll it up tightly.
  5. Grill the Burritos: Preheat your oven to 400°F (200°C). Brush each burrito with melted butter and place them on a baking sheet. Sprinkle more cheese on top. Bake for 10-12 minutes or until the cheese is melted and bubbly.
  6. Serve: Garnish with the remaining cilantro. Serve warm with salsa on the side.

  • If you prefer a crispier burrito, pan-fry each side lightly before baking.
