Instructions

  1. Prepare the Mixture: In a large bowl, combine the mashed potatoes, corn kernels, shredded cheese, chopped green onions, and chopped parsley. Add the egg, flour, garlic powder, salt, and pepper. Mix everything until well combined to form a thick batter.
  2. Shape the Fritters: Scoop about 2 tablespoons of the mixture and shape it into small patties. Repeat with the remaining mixture.
  3. Heat the Oil: In a large skillet, heat a generous amount of oil over medium heat. Make sure the oil is hot enough for frying.
  4. Fry the Fritters: Place the patties in the skillet, leaving space between each one. Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
  5. Drain and Serve: Remove the fritters and place them on a plate lined with paper towels to drain any excess oil. Serve hot with a dipping sauce of your choice.
