- 1 can (15 oz) chickpeas, drained and mashed
- 1/4 cup buffalo sauce
- 1/2 cup vegan shredded cheese
- 2 green onions, chopped
- 1/4 tsp garlic powder
- Salt & pepper to taste
- 2 large flour tortillas
- Oil for pan
- Vegan ranch or tahini sauce for serving
Instructions
- Mix filling: Combine mashed chickpeas, buffalo sauce, vegan cheese, green onions, garlic powder, salt, and pepper.
- Assemble quesadillas: Spread filling on half of each tortilla, fold over.
- Cook in skillet over medium heat with a bit of oil until golden brown and crispy, about 3–4 minutes per side.
- Slice and drizzle with ranch or tahini. Serve hot!
