Description

Delicious and easy Buffalo Chickpea Quesadillas made with meal-prepped ingredients for a quick and hearty meal.


Ingredients

Scale
  • 1 can (15 oz) chickpeas, drained and mashed
  • 1/4 cup buffalo sauce
  • 1/2 cup vegan shredded cheese
  • 2 green onions, chopped
  • 1/4 tsp garlic powder
  • Salt & pepper to taste
  • 2 large flour tortillas
  • Oil for pan
  • Vegan ranch or tahini sauce for serving

Instructions

  1. Mix filling: Combine mashed chickpeas, buffalo sauce, vegan cheese, green onions, garlic powder, salt, and pepper.
  2. Assemble quesadillas: Spread filling on half of each tortilla, fold over.
  3. Cook in skillet over medium heat with a bit of oil until golden brown and crispy, about 3–4 minutes per side.
  4. Slice and drizzle with ranch or tahini. Serve hot!
