Description
Decadent chocolate cheesecake brownie bites topped with chocolate ganache.
Ingredients

- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon salt
- 16 ounces cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons heavy cream
- 1 large egg
- ½ cup semi-sweet chocolate chips
- 2 tablespoons heavy cream
- Additional chocolate chips for topping (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a muffin pan with paper liners or use a silicone muffin mold.
- In a mixing bowl, combine melted butter, granulated sugar, and cocoa powder. Stir in eggs and vanilla. Add flour and salt and mix just until combined.
- Spoon brownie batter into muffin cups, filling each about ⅓ full. Bake for 10-12 minutes. Let cool.
- Reduce oven temperature to 325°F (160°C). In another bowl, beat cream cheese until smooth. Add powdered sugar, vanilla, heavy cream, and egg. Mix until creamy.
- Spoon cheesecake mixture over brownie bases and smooth the tops.
- Bake for 15-18 minutes or until centers are just set. Cool to room temperature, then chill in the fridge for at least 2 hours.
- For ganache, melt chocolate chips with heavy cream until smooth. Spoon over chilled cheesecakes and top with extra chocolate chips if desired.
- Let ganache set before serving. Enjoy chilled.
Notes
- These brownie bites are rich and best served chilled.
- Feel free to substitute the semi-sweet chocolate chips with milk chocolate if preferred.
