Description

Fall-off-the-bone BBQ ribs paired with cheesy grilled corn and crispy smashed potatoes — the ultimate backyard feast.


Ingredients

  • 1 rack pork ribs (½ rack per person)
  • ½ cup BBQ sauce
  • 2 ears of corn
  • 6 small baby potatoes
  • 2 tbsp butter
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp sour cream or ranch for potatoes
  • 1 tbsp bacon bits (optional)
  • Fresh parsley, salt, and pepper for garnish

Instructions

  1. Season ribs with salt and pepper, then bake covered at 375°F for 45 minutes.
  2. Uncover, brush with BBQ sauce, and bake another 15–20 minutes until caramelized.
  3. Boil baby potatoes until tender, then gently smash and bake with butter, salt, and pepper until crispy.
  4. Grill or roast corn, then brush with butter and sprinkle with Parmesan and a pinch of chili flakes.
  5. Add bacon bits and sour cream over the crispy smashed potatoes.
  6. Plate ribs, corn, and potatoes together for a hearty BBQ-style meal.
  7. Garnish with fresh parsley and serve warm.
