Description

A deliciously sweet banana butter made in a slow cooker, perfect for spreading on toast or using in recipes.


Ingredients

  • 4 very ripe bananas (peeled and sliced)
  • 2 tsp ground cinnamon
  • 2 tsp vanilla bean extract
  • ⅓ cup dark Muscovado sugar

Instructions

  1. Place the bananas, cinnamon, vanilla bean extract, and muscovado sugar in a slow cooker.
  2. Stir to combine.
  3. Cover with the lid slightly ajar to allow steam to escape.
  4. Cook on Low for 4–5 hours, stirring occasionally, until the mixture thickens and darkens.
  5. Blend with an immersion blender until smooth.
  6. Transfer the hot banana butter to a sterilized jar.
  7. Cover with a lid and let cool completely.
  8. Refrigerate up to 2 weeks.
