Description

Delightful mini tarts filled with creamy pastry cream and topped with fresh strawberries and cherries.


Ingredients

  • Tart shells – 6 pre-baked or homemade
  • Pastry cream – 1 ½ cups
  • Whipping cream – 1 cup
  • Sugar – 3 tbsp
  • Fresh strawberries – 1 cup
  • Pitted cherries in syrup – 1 cup
  • Vanilla extract – 1 tsp
  • Cornstarch – 1 tsp (for thickening cherry glaze)

Instructions

  1. Whip cream with sugar and vanilla until stiff peaks form; fold gently into chilled pastry cream for a light filling.
  2. Spoon or pipe cream into each tart shell.
  3. For cherry tarts: top with cherries and a drizzle of thickened syrup glaze.
  4. For strawberry tarts: arrange whole strawberries upright and pipe cream between them.
  5. Chill for 20 minutes to set the filling.
  6. Garnish with a chocolate stick or extra cream swirl on top.
  7. Serve cold for a glossy, creamy finish.
