Description
Delightful mini tarts filled with creamy pastry cream and topped with fresh strawberries and cherries.
Ingredients
- Tart shells – 6 pre-baked or homemade
- Pastry cream – 1 ½ cups
- Whipping cream – 1 cup
- Sugar – 3 tbsp
- Fresh strawberries – 1 cup
- Pitted cherries in syrup – 1 cup
- Vanilla extract – 1 tsp
- Cornstarch – 1 tsp (for thickening cherry glaze)
Instructions
- Whip cream with sugar and vanilla until stiff peaks form; fold gently into chilled pastry cream for a light filling.
- Spoon or pipe cream into each tart shell.
- For cherry tarts: top with cherries and a drizzle of thickened syrup glaze.
- For strawberry tarts: arrange whole strawberries upright and pipe cream between them.
- Chill for 20 minutes to set the filling.
- Garnish with a chocolate stick or extra cream swirl on top.
- Serve cold for a glossy, creamy finish.
Notes
- Ensure the tart shells are completely cooled before filling.
- Use fresh, ripe strawberries and cherries for the best flavor.
- Can be made a few hours in advance; just keep refrigerated until serving.
