Description

Ingredients

  • 1 bag fresh spinach tortellini
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable or chicken broth
  • 2 cups fresh spinach
  • 1 teaspoon fresh thyme or Italian seasoning
  • Salt and pepper, to taste
  • Freshly grated Parmesan cheese, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until soft.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Pour in the broth and add herbs, salt, and pepper. Bring to a gentle boil.
  4. Add tortellini and cook according to package instructions.
  5. Stir in fresh spinach during the last 2 minutes of cooking.
  6. Serve hot, garnished with Parmesan cheese and an optional drizzle of olive oil.
