- 1 bag fresh spinach tortellini
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable or chicken broth
- 2 cups fresh spinach
- 1 teaspoon fresh thyme or Italian seasoning
- Salt and pepper, to taste
- Freshly grated Parmesan cheese, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until soft.
- Add garlic and cook for 1 minute until fragrant.
- Pour in the broth and add herbs, salt, and pepper. Bring to a gentle boil.
- Add tortellini and cook according to package instructions.
- Stir in fresh spinach during the last 2 minutes of cooking.
- Serve hot, garnished with Parmesan cheese and an optional drizzle of olive oil.
