Description

A delicious and healthy ranch chicken meal prep that is easy to make and perfect for a week’s worth of lunches.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 2 tbsp ranch seasoning
  • 1 tbsp olive oil
  • 1 cup cooked rice
  • 1 cup steamed broccoli
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rub chicken breasts with olive oil and ranch seasoning.
  3. Place on a baking sheet and bake for 25-30 minutes or until fully cooked.
  4. Meanwhile, cook rice according to package instructions.
  5. Steam broccoli until tender.
  6. Divide chicken, rice, and broccoli into meal prep containers.
  7. Store in the refrigerator for up to 4 days.
