- ¼ cup pumpkin purée
- 1 cup graham cracker crumbs
- 1 cup white chocolate (melted)
- ½ tsp pumpkin spice
- 1 tbsp powdered sugar
- 1 tbsp crushed graham crackers (for topping)
- 1 tsp coconut oil (for chocolate melting)
Instructions
- In a bowl, mix cream cheese, pumpkin purée, powdered sugar, pumpkin spice, and graham crumbs until smooth.
- Roll mixture into small truffle-sized balls and place on parchment paper.
- Freeze for 20–30 minutes until firm.
- Melt white chocolate with coconut oil, then swirl in a little extra pumpkin purée for a marbled look.
- Dip each truffle into the chocolate, coating fully and setting on parchment.
- Sprinkle crushed graham cracker crumbs on top before the coating sets.
- Chill until firm and enjoy creamy, fall-flavored bites.
