- 1 can (15 oz) peach halves, drained
- 1 cup heavy cream (whipped) or pastry cream
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- 3 large eggs
- ½ cup butter, melted
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
- Powdered sugar for dusting
- Light glaze (optional: powdered sugar + milk)
Instructions
- Preheat oven to 350°F and grease a square baking dish.
- In a bowl, whisk eggs and sugar until fluffy. Add melted butter and vanilla.
- Sift in flour, baking powder, and salt, mixing until smooth.
- Pour half the batter into the dish, then place peach halves evenly on top.
- Pipe or spoon cream/pastry cream around and inside each peach.
- Cover with the remaining batter and bake 25–30 minutes until golden.
- Dust with powdered sugar, drizzle glaze if desired, and cut into squares.

- For a richer flavor, use pastry cream instead of whipped cream.
