Description

Ingredients

  • 1 can (15 oz) peach halves, drained
  • 1 cup heavy cream (whipped) or pastry cream
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup butter, melted
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • Powdered sugar for dusting
  • Light glaze (optional: powdered sugar + milk)

Instructions

  1. Preheat oven to 350°F and grease a square baking dish.
  2. In a bowl, whisk eggs and sugar until fluffy. Add melted butter and vanilla.
  3. Sift in flour, baking powder, and salt, mixing until smooth.
  4. Pour half the batter into the dish, then place peach halves evenly on top.
  5. Pipe or spoon cream/pastry cream around and inside each peach.
  6. Cover with the remaining batter and bake 25–30 minutes until golden.
  7. Dust with powdered sugar, drizzle glaze if desired, and cut into squares.
