Instructions
- Preheat oven to 425°F (220°C).

- In a skillet over medium heat, cook ground beef until browned; drain excess fat.
- Stir in taco seasoning and a splash of water, then simmer for 5 minutes.
- Prepare cheese sauce by melting cheddar with a bit of milk, or use ready-made nacho cheese.
- In serving bowls, layer roasted potatoes, taco-seasoned beef, a spoonful of cheese sauce, and fresh salsa.
- Garnish with cilantro and a lime wedge for brightness.
