Jack-O’-Lantern Stuffed Peppers are bell peppers carved into spooky jack-o’-lanterns and filled with a hearty rice and bean mixture, perfect for Halloween.
Ingredients

- 6 Orange bell peppers
- 2 cups Cooked rice
- 1 can Black beans or kidney beans
- 1 Onion (diced)
- 2 cloves Garlic
- 1 can Diced tomatoes
- 2 tablespoons Olive oil
- 1 teaspoon Chili powder
- 1 teaspoon Cumin
- Salt & pepper to taste
- Shredded cheese (optional topping)
Instructions
- Slice the tops off bell peppers, remove seeds, and carve jack-o’-lantern faces.
- Sauté onion and garlic in olive oil until softened.
- Stir in beans, diced tomatoes, rice, and spices; cook until combined.
- Stuff each pepper with the rice mixture.
- Place peppers upright in a baking dish, cover loosely with foil, and bake for 25–30 minutes.
- Optional: Remove foil, sprinkle cheese on top, and bake for 5 more minutes.
- Serve hot as a spooky and hearty Halloween entrée.
Notes
- Feel free to customize the filling with your favorite ingredients.
- These can be made ahead of time and baked just before serving.
- For a spicier version, add jalapeños or hot sauce to the filling.
