Description

Jack-O’-Lantern Stuffed Peppers are bell peppers carved into spooky jack-o’-lanterns and filled with a hearty rice and bean mixture, perfect for Halloween.


Ingredients

Scale
  • 6 Orange bell peppers
  • 2 cups Cooked rice
  • 1 can Black beans or kidney beans
  • 1 Onion (diced)
  • 2 cloves Garlic
  • 1 can Diced tomatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • Salt & pepper to taste
  • Shredded cheese (optional topping)

Instructions

  1. Slice the tops off bell peppers, remove seeds, and carve jack-o’-lantern faces.
  2. Sauté onion and garlic in olive oil until softened.
  3. Stir in beans, diced tomatoes, rice, and spices; cook until combined.
  4. Stuff each pepper with the rice mixture.
  5. Place peppers upright in a baking dish, cover loosely with foil, and bake for 25–30 minutes.
  6. Optional: Remove foil, sprinkle cheese on top, and bake for 5 more minutes.
  7. Serve hot as a spooky and hearty Halloween entrée.

  • Feel free to customize the filling with your favorite ingredients.
