Ingredients

  • 4 chicken drumsticks or thighs
  • 2 tbsp honey
  • 2 lemons (1 sliced, 1 juiced)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F and lightly oil a baking dish.
  2. In a small bowl, mix honey, lemon juice, olive oil, garlic, paprika, salt, and pepper.
  3. Place chicken in the dish and pour the honey-lemon mixture over it, coating evenly.
  4. Top each piece with a lemon slice.
  5. Roast for 35–40 minutes, basting once halfway through, until chicken is golden and cooked through.
  6. Garnish with chopped parsley and serve with pan juices.
