A quick and tasty recipe for Garlic Herb Meatball Rice Bowl featuring ground chicken or turkey, fresh vegetables, and seasoned rice.

- 1 lb Ground chicken or turkey
- 2 cups Cooked white rice
- 1 Zucchini, diced
- 1 Bell pepper, diced
- 2 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 2 tbsp Fresh parsley, chopped
- Salt & pepper to taste
- 1 cup Butternut squash cubes (optional)
Instructions
- Preheat oven to 400°F (200°C) or heat a skillet over medium.
- In a bowl, mix ground chicken with garlic powder, onion powder, parsley, salt, and pepper. Shape into small meatballs.
- Cook meatballs in a skillet with olive oil or bake for 15–20 minutes until golden brown and cooked through.
- Meanwhile, sauté zucchini, bell pepper, and butternut squash in olive oil until tender and lightly caramelized.
- Warm cooked rice and season with a little salt and chopped parsley.
- Assemble bowls: add a base of rice, line up the meatballs, and spoon vegetables beside them.
- Garnish with extra herbs or a drizzle of sauce if desired, then serve warm.
Notes
- Feel free to substitute ground chicken with turkey or any preferred protein.
- Vegetables can be customized based on seasonal availability.
