Ingredients

  • 1 lb Ground chicken or turkey
  • 2 cups Cooked white rice
  • 1 Zucchini, diced
  • 1 Bell pepper, diced
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 2 tbsp Fresh parsley, chopped
  • Salt & pepper to taste
  • 1 cup Butternut squash cubes (optional)

Instructions

  1. Preheat oven to 400°F (200°C) or heat a skillet over medium.
  2. In a bowl, mix ground chicken with garlic powder, onion powder, parsley, salt, and pepper. Shape into small meatballs.
  3. Cook meatballs in a skillet with olive oil or bake for 15–20 minutes until golden brown and cooked through.
  4. Meanwhile, sauté zucchini, bell pepper, and butternut squash in olive oil until tender and lightly caramelized.
  5. Warm cooked rice and season with a little salt and chopped parsley.
  6. Assemble bowls: add a base of rice, line up the meatballs, and spoon vegetables beside them.
  7. Garnish with extra herbs or a drizzle of sauce if desired, then serve warm.
