Instructions

  1. Prepare the base by crushing chocolate cookies with butter, pressing into circles, and chilling.
  2. Whip cream until soft peaks form and set aside.
  3. Melt chocolate with sugar and a touch of cream, then fold in bloomed gelatin.
  4. Fold whipped cream into the chocolate mixture until smooth and airy.
  5. Pipe mousse into flower-shaped silicone molds and freeze until firm.
  6. Unmold, place on chocolate cookie bases, and glaze with chocolate ganache or mirror glaze.
  7. Garnish with sprinkles and edible gold leaf for a refined finish.
