Ingredients

  • Dark cherries (fresh or frozen)
  • Heavy cream
  • Gelatin (for mousse + glaze)
  • White chocolate (for mousse shell)
  • Sugar
  • Glucose syrup (for glaze)
  • Red food coloring
  • Vanilla extract
  • Chocolate sticks (for stems)

Instructions

  1. Cook cherries with sugar into a compote and chill until thickened.
  2. Whip cream and fold into melted white chocolate with gelatin for a smooth mousse.
  3. Fill silicone sphere molds halfway with mousse, add a spoonful of cherry compote, then cover with more mousse. Freeze overnight.
  4. Prepare mirror glaze by boiling sugar, glucose, and condensed milk, then whisking in bloomed gelatin, white chocolate, and red coloring. Cool glaze to ~95°F (35°C).
  5. Unmold frozen domes, insert chocolate sticks as stems, and pour glaze evenly over each.
  6. Set on a rack to drip excess glaze.
  7. Transfer carefully to plates and serve chilled.
