Ingredients
- Dark cherries (fresh or frozen)
- Heavy cream
- Gelatin (for mousse + glaze)
- White chocolate (for mousse shell)
- Sugar
- Glucose syrup (for glaze)
- Red food coloring
- Vanilla extract
- Chocolate sticks (for stems)
Instructions
- Cook cherries with sugar into a compote and chill until thickened.
- Whip cream and fold into melted white chocolate with gelatin for a smooth mousse.
- Fill silicone sphere molds halfway with mousse, add a spoonful of cherry compote, then cover with more mousse. Freeze overnight.
- Prepare mirror glaze by boiling sugar, glucose, and condensed milk, then whisking in bloomed gelatin, white chocolate, and red coloring. Cool glaze to ~95°F (35°C).
- Unmold frozen domes, insert chocolate sticks as stems, and pour glaze evenly over each.
- Set on a rack to drip excess glaze.
- Transfer carefully to plates and serve chilled.
